Recipe: Mayonnaise

Mayonnaise has always been a favourite condiment of mine, but it is filled with preservatives and chemicals and the oils used are not always that healthy. I never knew how easy it was to make your own.  Homemade mayo takes 5 minutes and is packed with protein and healthy oils. I have tried many methods but this is my favourite one. Some people use an immersion blender, some hand whisk, I use a beater.

Mayonnaise

INGREDIENTS

2 egg yolks at room temperature
250ml oil of your choice, I like olive or avocado oil
Honey
1 tbsp dijon mustard
1tbsp apple cider vinegar
(I’ve added quantities but I usually add the flavours bit by bit and taste as i go)

DIRECTIONS

Add the eggs to a mixing bowl, start beating them and add the oil in increments. When your mayo has thickened and you have used all the oil beat in the mustard, honey and apple cider vinegar, adjusting the flavour to your liking. There are many variations of flavour, a bit of Googling and you can tweak the recipe to your liking.

Enjoy this mayo with sweet potato and butter bean patties.
